Mad City Botanical Rum Cocktails

Holiday destination back on the amber list? Recreate the vibe at home by learning how to make a trio of delicious rum cocktails –  including the best Mojito –  to enjoy when the sun shines. 

Fix yourself one of these delicious classic rum cocktails drinks, sit back and think of warm sand, blue skies and laid back beats!  

Mad City Piña Colada

Ingredients:

  • 50ml Mad City Botanical Rum
  • 100ml Pineapple Juice
  • 100ml Coconut and Pineapple Green Tea (Twinings brewed at double strength)
  • 1 teaspoon white sugar
  • juice of 1/6th lime.


Method: (serves 2)

  • Brew 1 teabag in 200ml cold water for 5 minutes
  • Chop the lime into sixths
  • Pour and squeeze all of the ingredients into a shaker
  • Shake hard over ice
  • Double strain into a glass over cubed ice
  • Garnish with a lime twist/cherry/or pineapple slice.

Mad City Rhubarb Mojito 

 

For The Rhubarb Mint Simple Syrup:

• 2 large handfuls roughly chopped rhubarb
• 100g sugar
• 100ml water
• 1/2 bunch fresh mint.

For The Cocktail:


  • 50ml Mad City Botanical Rum 
  • A few sprigs of fresh mint
  • 50ml rhubarb mint simple syrup
  • 70ml lime juice
  • A splash soda water
  • 1 stalk of rhubarb, for garnish (optional)
  • 1 stalk of rhubarb, for garnish (optional).


Method:

1. Make the rhubarb simple syrup: Place the rhubarb sugar, water, and mint into a saucepan. Over a high heat, bring to a boil then lower the heat and simmer for 15 minutes, stirring occasionally. Remove from heat and strain mixture through a fine mesh sieve. Allow the syrup to cool.
2. Make the cocktail: In your glass of choice, place a few sprigs of fresh mint. Muddle, then top with crushed ice. Pour over rhubarb mint simple syrup, lime juice, and rum, then top with a splash of soda water.
3. Garnish with mint, a lime wedge, and a spiral peel of rhubarb (made using a vegetable peeler to peel a fine ribbon from a stalk of rhubarb) or a slice to make a stirrer.

Mad City Daiquiri 

 

Ingredients:

Method:

  • Add ice to cocktail shaker.
  • Mix 15ml of Acacia Honey with 15ml warm water directly in a spirit measure or measuring jug.
  • Add the honey syrup, 50ml Mad City Rum and 20ml Lime Juice to the shaker.
  • Stir until chilled.
  • Serve over ice, garnish with a basil leaf and orange twist.
 

Mad City Frozen Daiquiri 

 

Ingredients:

Method:

  • Add ice to cocktail shaker.
  • Mix 15ml of Acacia Honey with 15ml warm water directly in a spirit measure or measuring jug.
  • Add the honey syrup, 50ml Mad City Rum and 20ml Lime Juice to the shaker.
  • Stir until chilled.
  • Add to a blender with a handful of ice and whizz until you get your desired  slushy consistency
  • Garnish with a wheel of lime or pop it in the freezer until you're ready to enjoy.
